Feel good cookies!

These chocolate chip cookies are one of those dishes whose satisfaction to effort ratio is way up there. Whether you want to indulge yourself, impress your prospective mother in law, cheer up a friend or pamper a boyfriend. It works like magic!!

For about 2 dozen cookies you will need:

1and1/4 cups of flour (both Maida and whole wheat are equally good)
½ tsp baking powder
½ cup butter, softened
1 cup sugar
1 large egg
1 tsp vanilla essence (optional)
1 cup chocolate chips ( If you are feeling particularly indulgent, use Lindt.)

How:
Preheat your oven to 190deg C.
Sift together the flour and baking soda.
In a large bowl, beat the butter and sugar till creamy. Beat in the egg and vanilla essence, if using and gradually beat in the flour mixture. Stir only till just blended. Do not over beat. Stir in the chocolate chips.

Drop the dough about 2 inches apart on ungreased cookie trays. Bake for about 10 mins till golden brown around the edges.

They are perfect, hot out of the oven or can be stored up to a week in an airtight box( But you can be assured they wont last so long)

The fabulous thing about these cookies is that while they bake in your oven they fill your home with a gorgeous decadent aroma of chocolate and butter and vanilla. It’s the closest I have come to heaven. :)
