Chocolate Excess!!

Being oven deprived in Mumbai and my quest on the path to yogi-ness had led me to not baking for almost two months!!!! So when i found myself with a whole day in a near empty house with nothing but an oven i decided to bake..and what a wonderful time we had!! Me, chocolate and my oven!!

I made a Triple Chocolate Brownie I have always wanted to try. Its a recipe from Nigella Lawson I tweaked slightly to accomodate my pennilessness. :). The results were fantastic. Crunchy on the outside, gooey on the inside and chocolate chips in every bite.

Ingredients

100 gms of salted butter

70gms of fine cocoa powder

3 eggs

160 gms castor sugar

1 tablespoon pure vanilla extract

150gms plus 2 tablespoons all-purpose flour

1 teaspoon salt

1/2 cup white chocolate buttons, chips, or morsels

1/2 cup semisweet chocolate buttons, chips or morsels


Directions

Preheat the oven to 350 deg F or 200 deg C

In a bowl, beat the eggs together with the sugar and vanilla extract.
Melt the butter and add the egg and sugar mixture and beat well. Fold in the flour and cocoa powder.Then stir in the white chocolate buttons or chips, and the semisweet chocolate buttons or chips. Beat to combine then scrape and pour the brownie mixture into a tin.
Bake for about 25 minutes. You can see when the brownies are ready because the top dries to a slightly paler brown, while the middle remains dark, dense and gooey. Be warned that they continue to cook when they are cooling.
To serve, cut into squares while still warm and pile up on a large plate.  They are absolutely divine! Love the recipe. Im gonna make this one a staple.


I was kinda on a roll, and wanted to bake some more.I decided to make cookies, just modified my favourite cookie recipe a little to make what I christened Mocha Indulgence.
 Heres the recipe:

For about 2 dozen cookies you will need:

1and1/4 cups of flour (both Maida and whole wheat are equally good)

½ tsp baking powder

½ cup butter, softened

1 cup sugar

1 large egg

1 tbsp of coffee powder

50 gms of dark chocolate, melted

1 cup chocolate chips (half semi sweet and half white)

How:

Preheat your oven to 190deg C.

Sift together the flour, coffee powder and baking soda.

In a large bowl, beat the butter and sugar till creamy. Beat in the egg and melted chocolate,and gradually beat in the flour mixture. Stir only till just blended.Stir in the chocolate chips.
Drop the dough about 2 inches apart on ungreased cookie trays. Bake for about 10 mins till crisp around the edges and still soft in the centre. I fed these cookies to a dear friend while they were still warm and he absolutely loved them.
