Black russian baby cakes!!

My super brother in law introduced me to this divine drink called the Black russian (Kahlua and vodka), and I picked up this wonderful little book called Intercourses from a second hand book sale which had the recipe for a Black Russian cake. It called for a pudding mix which I couldnt find anywhere so I tweaked it to suit me better!

Here's what you need:

  • 85 gms of butter softened
  • 150 gms of brown sugar
  • 50 gms of flour
  • 50 gms of unsweetened cocoa powder
  • 2 eggs
  • 2tbsp Kahlua or other coffee flavoured liquer
  • 1tbsp Vodka 
  • 1 tsp baking powder
For the icing
  • 100gms semisweet chocolate (chopped)
  • 100 ml of cream
  • 2tbsp Kahlua

How:

Beat the eggs with the sugar till it becomes pale and fluffy. Sift the flour, cocoa powder and baking powder together. Add the butter to the egg mixture and stir till well blended. Pour in the flour mixture, add the alcohol, give it a gentle stir.

Pour the glistening brown batter into a greased tin and bake at 180 deg C for about 20-25 mins. I baked these in little muffin cups and they were a huge hit!

While the cake bakes, spreading its delicious aroma all over your kitchen, get cracking on your icing. Heat the cream till it is hot, not boiling, turn off the heat, drop in the chocolate and let the chocolate take over.

Let the cake and the icing come to room temperature and then spread a nice thick layer on the cake and enjoy!! You could also top it with grated white chocolate or accentuate the coffee with a light dusting of instant coffee powder!

    My concern is how do I find Kahlua is DRY Gujarat! :-D

  2. Dont bother with the Kahlua..just use coffee decoction and increase the amount of vodka!! ;)
