Diabetics Delight!!

It was my Dad's birthday a while back and I was twisting myself into knots trying to find him a sugarfree dessert! I hate hate hate (enough to say it three times)  the after taste of desserts which are made with sugar substitutes. October being second summer in Hyderabad I decided to make a sugar free icecream!!

So here's what I made, Apple and cinnamon semifreddo!!!

What you need:

  • 1 egg
  • 2 egg yolks
  • 50 g honey
  • 150 ml cream
  • 1 apple
  • 2 tsp of ground cinnamon
  • 1 tsp of brown sugar
  • 1 tsbp of butter
How:

  • Beat the egg and egg yolks with the honey in a bowl, over a saucepan of gently simmering water, until the mixture is pale and thick.
  • Whip the double cream until thick, and then gently fold in the egg and honey mixture and add half of the ground cinnamon. Pour into a container and put it in the freezer for about 2 hours.
  • Once the icecream is frozen, chop up the apple, melt the butter on a heavy bottomed pan. Once the butter melts, add the sugar and once it melts add the apples and the cinnamon and cook for about 3 minutes. The apples should be caramelised but still a little crisp.
  • If you want to keep the dessert completely sugar free skip it from the previous step. Apples, butter and cinnamon is pretty good combination!!
  • Scoop out the ice cream into a bowl, spoon some of the apples on it and Enjoy!!
