Pure Magic!

Since I was about 6 years old I have loved Pure Magic, the biscuit. The other day I was in an intoxicant induced stupor talking about cookie conveyor belts and dessert buffets when it struck me that I should try to make pure magic myself. It seemed that I had reached that point in my baking life where I was ready to come up with a recipe based on taste. So here it is Pure D Magic!!

What you need:

For the biscuits
  • 1/2 cup of soft butter
  • 1/2 cup of sugar
  • 1/2 cup of flour
  • 1 cup of cocoa powder
  • 1 egg
For the cream
  • 1/2 cup of dark chocolate (chopped)
  • 1/2 cup of cream
  • 2 tbsp of dark rum

How:
  • Pre heat the oven to 200 deg C
  • Cream the butter and sugar together till light and creamy, for about 3 minutes.
  • Beat in the egg and then sift the cocoa powder and flour into the mixture
  • The dough will be a little dry right now, bring it in together with some more kneading and then wrap it in cling film and refrigerate for about an hour.
  • Pull the dough out of the fridge and on a surface lightly dusted with icing sugar, roll out the dough. Using a cookie cutter, cut out little cirlces.
  • Bake them for 10-12 mins till your house is filled with the aroma of chocolate.
  • While the cookies are baking, heat the cream gently and when it is warm, throw in the chopped chocolate and turn off the heat. Let the chocolate melt and combine them gently till it is a smooth glossy sauce. Pour in the rum and let it cool in the fridge till it is semi- solid.
  • When the cookies are cool and the cream is set, put a small dollop of the cream on one biscuit and press another one on top.
  • Let them rest for a while and enjoy with a glass of cold coffee!!
