Gelato di Menta

Who doesnt love chocolate, and chocolate icecream really is way up in the dessert hall of fame. But this recipe is not your regular chocolate icecream. The mint makes it so intense and super adult. Its like really good dark chocolate. You only need a tiny bite to satiate your senses.

This recipe is from one of the prettiest books ever. Its called Recipes from an Italian Summer. Fantastic!!.

What you need:
200 g mint leaves, very finely chopped
80g caster sugar
50g dark chocolate
2 egg yolks
200ml double cream

How
1. Mix together the mint leaves and sugar in a bowl. Put the chocolate in a bowl set over a pan of simmering water and allow to melt. Remove from heat and allow to cool.
2.Add the egg yolks to the chocolate and stir until evenly mixed. It will be a deliciously lucious dark brown mixture.
3.Whip the cream in a separate bowl until thick and stir into the mint mixture, then fold into the chocolate mixture.
4. Spoon the mixture into a mould and freeze for 3-4 hours.

When its set, it has a smooth creamy texture. Enjoy it slowly, letting it take over all your senses. It really is the food of the Gods and well the Italians.
