Long Hard Day Series- Part II:- Panzanella

Just the other day PeeVee suggested a Long Hard Day series and the first thing that came to mind was this. Panzanella.. it is Italian, exotic sounding and super ridiculously simple. Just love saying I had a Panzanella for dinner, sounds like I slaved over a store for hours and hours, when actually you dont need a stove at all.

The recipe given below is just a suggestion, when you decide to make this one, open your fridge, pull out and chop up whatever you fancy and throw it in.

What you need:-
  • Stale bread- broken up into chunks (how much ever you feel like eating)
  • 1 small onion chopped into half moons
  • 3 tbsp balsamic vinegar
  • 200 g of tomatoes, chopped
  • 1 clove of garlic
  • 2 tbsp olive oil
  • a large bunch of basil/ parsley/corriander
How:
  • Put the chopped onions into a large salad bowl and pour in the balsamic vinegar and leave it to steep while you do the rest
  • You can toast the bread in a 200 deg C oven for 5 mins if you want. I usually dont bother with that.
  • Chop the garlic finely and put it into the onions and vinegar. Throw in the chopped tomatoes, salt and pepper as required.
  • At this stage you can also throw in some olives, boiled corn, grated cheese, anything that your heart desires.
  • Give it all a good mix and then toss the bread in and drizzle over the olive oil. Tear up the basil/parsley/corriander, give it a good mix.
  • Let the whole thing rest for a few minutes while you get yourself a drink.
  • Sit down and enjoy a lovely meal with zero effort!!

    Maybe I'll skip the tomatoes, I don't like glob inside them...

  2. I do love Panzanella and you can also just add, Jalapenos, sun dried tomatoes and olives and capers and all that good stuff that comes in brine in bottles and you don't even need to chop :-). It would be a not so ecological and neither economical solution. But hey somedays are just lazy.

    P.S You could add the Hard Day Pasta link at the end may be?

  3. Pee Vee: Use Sundried tomatoes instead! I dont like the glob either. i just scoop them out!
