Long hard day series Part III- Crustless Pizza

This dish really is an offspring of the omlette and the pizza! The wonderfulness of the pizza combined with the ease of the omlette. It is for those horrible days at the end of which you are nothing but the sum of your irritation and impatience. You dont even have to bother shopping for this one! Just a few whips, pop it in the oven, step into a nice hot shower, step out and Voila!....Dinner!!

What you need:
  • 1 egg
  • 100 g flour (use wholewheat if u like)
  • Salt
  • 250 ml milk
  • Butter for greasing
  • 1 cup grated cheese 
  • Toppings of your choice (sun dried tomatoes, shredded chicken, sweet corn, capsicum, onions, chorizo or any other sausage, the options are endless)
How:

  • Preheat the oven to 200 degrees. In a small bowl, beat the egg with the flour, salt, to taste, and milk to make a smooth batter.

  • Butter a pie dish,( the size of the dish is really important here, ensure that your dish is big enough to have just a thin layer of the batter) then stir half the grated cheese into the batter, before pouring it into the dish.

  • Bake for 20 minutes. (Nows the time to take that shower) Take the dish out of the oven, sprinkle with the remaining cheese, and add whatever toppings you have chosen. Return the dish to the oven and cook for another 5 minutes to make sure it's heated through.

  • Once the cheese on top is melted, take it out of the oven and serve, cut into slices.
