Fiery Srilankan Pineapples!!

Summer is upon us, this means an unbearable heat and specifically to a Chartered accountant it means financial year end!! As a result, I have been spending long long hours sitting in front of excel sheets, and haven't had the will to turn on the laptop to blog when I get home!! The cooking hasn't stopped though,it is my peace, my sanity!!

Pineapples are one of my favourite fruits,I remember my fruit vendor in the Chembur market in Mumbai would cut my pineapple into beautiful thin slices and I would take one from him and devour it greedily right there with the sweet juices dripping all the way to my elbow. This was the pineapple I knew and loved. Then Srilanka happened to me and the fabulous Karuna introduced me to this Pineapple curry!!


What you need:
1 medium sized Pineapple
Oil – 3 tsp
1 large onion
Green chillies- 5
Cinnamon – 1 stick                                    
Garlic – 3 cloves, chopped
Curry leaves – a handful
Turmeric – ¼ tsp
Curry powder – 1 tbsp (which i bought from Srilanka, but you can put regular garam masala)
Chili powder – 1 tsp
Salt – 1 tsp
Coconut milk – 1 cup

How:
  • Chop the pineapple into bite sized pieces, and the onions, garlic and green chillies finely.
  • Heat the oil in a pan and throw in the onions, garlic, green chillies, curry leaves and cinnamon.
  • After a few moments, put everything else into the pan. This simplicity for me is the beauty of Srilankan cuisine. Unlike the Indian cuisine where there is a particular time at which particular ingredients need to be added to the dish, Sri lanka gives you the freedom to throw everything in together and move on to the next dish!!
  • Give it a quick stir and cook on low heat for 15 minutes.
  • When your house is full of the glorious aroma of the cinnamon, your dish is ready!!
